Font — This is the standard Mac OS X Font submenu; it contains commands for setting a font and a style for the selected text.
Text — This submenu contains commands for changing the selected text's position and behavior. Most of the functionality here is also available in the Text inspector.
Copy Style — Put the styles of the selected object on the clipboard, where they can be pasted onto other objects.
Paste Style — If there are object styles on the clipboard, apply them to the selected objects.
Color Profiles — If you have turned on color management in the ColorSync preferences, you can assign or convert the color profiles of the document. Assign Profiles doesn't change the color data in the document; it just changes how the color data is interpreted when it is sent to a display or printer. This means the colors you see on the screen or the printed page may change when you assign a different profile.
Convert to Profiles actually changes the color data in the document so that it looks the same even through a different profile. You shouldn't see a difference in color when you do this; the whole idea is to keep the colors looking the same even on a different device.
